  2/3 Cup of Plain Greek-style yogurt

  10 cups of fresh spinach (10 ounces)

  01 clove, halved

  02 tablespoons of vegetable oil Kosher salt

  02 tablespoons of unsalted butter, divided

  02 tablespoons of chopped scallion (pale-green and white parts only)

  03 tablespoons of chopped leek (pale-green and white parts only)

  01 teaspoon of fresh juice

  04 large eggs

  1/4 teaspoon of kirmizi Biber (Turkish chili powder), or 1/4 teaspoon crushed red pepper flakes and a pinch of paprika

  01 teaspoon of chopped fresh oregano


⌾ Step 01

Preheat the oven at 300°, meanwhile mix garlic and a pinch of salt in 2/3 cup of straightforward Greek yogurt and put aside.

⌾ Step 02

Heat 1 tbsp of oil and butter during a large skillet over low to medium heat. Pour in scallion and leek and blend well. Cook this butter mixture for 10 minutes over low heat until scallion and leeks are soft. Now season with salt, juice and add spinach leaves and keep turning repeatedly on medium to high flame. Cook to 5-6 minutes until it’s wilted.

⌾ Step 03

Now take another big skillet and pour within the mixture leaving all the surplus fluid behind. If you're using two small skillets than divide the spinach mixture equally into two smaller skillets. Now make 4 scoops within the center of the spinach mixture in larger skillet or 2 scoops each if using smaller ones. Break each egg carefully into each scoop and lookout of the yolk to be intact. Put the skillet in preheated oven and bake for 12 to fifteen minutes or until the egg whites are cooked well.

⌾ Step 04

Take a little saucepan and melt 1 tbsp of butter over low heat and sprinkle a pinch of salt and smoked kirmiz Biber or chili flakes and cook until the froth starts to make or for 1-2 minutes. Add oregano and cook for 40 more seconds and switch off the warmth.

Remove garlic cloves from the yogurt mixture and pour over the egg spinach mixture and drizzle with prepared spiced butter sauce. and luxuriate in this versatile egg recipe.
