Bacon Pancakes

A little sweet, more savory, moist, fluffy, and yummiest pancakes are on your way. Bacon pancakes seem like an evil treat for breakfast. These savory pancakes with the hint of little sweetness taste equally awesome with a touch of sauce and sour cream, or a drizzle of sugar or syrup. It’s all on you whether you wish a little sweeter or a little more savory.

As per the most ingredients, all you're getting to use is eggs, butter, and coconut flour and therefore the king of the recipe BACON astray. But there’s another new thing that goes to be added within the recipe, which is, Gelatine.  

Why Gelatine?

Gelatine is beneficial for skin, joints, and bones. you'll easily add gelatine in your diet with this recipe, without affecting its texture and taste. Since we are getting to use grainy gelatine as we use in soups, smoothies, and other baked food products.

Just mix it in warm water or other liquid using within the recipe.



⍟  6 slices of  Bacon 

⍟  3 Egg whites

⍟  1/4 Cup of Coconut flour (30 g)

⍟  1 Tablespoon of Purified granular gelatin (15 ml) 

⍟  1/2 Cup of Water (120 ml)

⍟  2 Tablespoons of Unsalted butter, melted (30 ml)

⍟  2 Tablespoons of Finely chopped chives (30 ml) 

⍟  1/2 Cup Full-fat soured cream for topping (Optional) 


Step 01

Heat the pan on medium heat and cook bacon until crispy. Remove the bacon from the pan, chop or crumple it, and put it aside for later use. Leave the bacon fat within the pan.

Crack two egg whites during a bowl and whisk with a hand blender or electric mixture to make soft peaks. And put aside. (You also can use full eggs but it'll make the pancakes less fluffy and a touch heavy!)

⌾ Step 03

Take another large bowl and add almond flour, bacon, butter, gelatine, and chives. Mix well with water and add egg whites. Carefully fold the whites with bacon mixture to form a lumpy and thick mixture.

⌾ Step 04

Turn on the flame and warmth the bacon fat over low heat. Pour in 2 tbsps. Of the batter within the pan and gently smooth the batter to make sort of a pancake. you'll also use a biscuit cutter to form a fine shape of the pancake. Cook each pancake for 3-4 minutes or until fully done and serve hot.

You can also make them like buns for sandwiching them with sausages and eggs.
